If you’re looking for the perfect snack to have with your soup, or for a delicious savory breakfast, these savory vegetarian Mediterranean waffles are for you!

Chop the roasted red bell pepper, the sundried tomatoes preserved in oil, and the olives.
2. Mix
Mix the wet ingredients: eggs, olive oil, and soy milk. Add the flour, the baking powder, the oregano, and the salt. Add the sundried tomatoes, the roasted bell peppers, and the olives.
3. Cook
Heat your waffle iron to medium heat and brush it with oil. I used olive oil to keep with the Mediterranean theme. I use just under 1/2 cup of batter on each side of the waffle maker. Adjust the amount of batter to the size of your waffle iron.
Cook for about 3 minutes and then transfer to a wire rack to cool.

1 roasted bell pepper
1 tablespoon chopped sundried tomatoes, preserved in oil
1/4 cup olives
2 eggs
2 tablespoons olive oil
3/4 cup soy milk
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/4 teaspoon salt
Directions
