Fluffy Cinnamon Oat Pancakes

Ingredients
1egg
1/2 cup apple sauce
1/2 cup oat milk
1tsp vanilla
1 tablespoon melted butter
1 cup oat flour
1 teaspoon cinnamon
1 teaspoon baking powder
pinch salt
2 tablespoons sugar
Directions
- To a bowl, add 1 egg, 1/2 cup of apple sauce, 1/2 cup of oat milk, 1 tablespoon of melted butter, and 1 teaspoon vanilla. Whisk them together.
- Add 1 cup of oat flour, 1 teaspoon of cinnamon, 1 teaspoon of baking powder, a pinch of salt, and 2 tablespoons of sugar. Stir until combined.
- Heat a non-stick griddle or frying pan over medium heat. I coat the griddle with what’s leftover in the bowl I used for melting the butter. But you don’t really have to.
- Scoop the batter onto the griddle. I use about 1/4 cup for each pancake. When the top of the pancakes starts bubbling, turn them over, and let them cook for another minute.
